Trader Joe’s Recipes for Busy Moms

Trader Joe’s is my all-time favorite grocery store, especially for quick and easy meals (and snacks!) and I love trying new recipes for dinner! As a mom, I understand that life can be a whirlwind of school runs, work, soccer practice, and all the other responsibilities that come with having little ones. The last thing you want to worry about is what to cook for dinner. Check out these five quick and delicious dinner recipes using your favorite Trader Joe's products. These Trader Joe’s recipes are designed to save you time in the kitchen, so you can spend more quality moments with your loved ones or relaxing on the couch with your fave bravo show and glass of wine or mocktail!

1. Trader Joe's Mandarin Orange Chicken Stir-Fry

Ingredients:

  • 1 bag of Trader Joe's Mandarin Orange Chicken

  • 1 bag of Trader Joe's Frozen Stir-Fry Vegetables

  • 1 cup of cooked rice

Instructions:

  1. Cook the Mandarin Orange Chicken according to package instructions.

  2. In a separate pan, stir-fry the frozen vegetables until they're heated through and slightly tender.

  3. Combine the cooked chicken and stir-fried vegetables.

  4. Serve over a bed of cooked rice.

2. Trader Joe's Mediterranean Chickpea Salad

Ingredients:

  • 1 can of Trader Joe's Organic Chickpeas, drained and rinsed

  • 1 cup of Trader Joe's Mediterranean-style salad kit

  • 1/2 red onion, sliced

  • 3 mini cucumbers, chopped

  • 1/2 cup of cherry tomatoes, halved

  • 1/4 cup of feta cheese, crumbled

  • 2 tablespoons of olive oil

  • Juice of 1 lemon

  • Salt and pepper to taste

Instructions:

  1. Combine the chickpeas, Mediterranean salad kit, cherry tomatoes, cucumber, onion, and feta cheese in a bowl.

  2. Drizzle with olive oil and lemon juice.

  3. Season with salt and pepper.

  4. Toss everything together and serve for a refreshing and filling salad.

3. Trader Joe's Chicken Shawarma Wraps

Ingredients:

  • 1 package of Trader Joe's Chicken Shawarma

  • 4 Trader Joe's Middle Eastern Flatbreads

  • Tzatziki sauce

  • 1 cucumber, thinly sliced

  • 1 cup of cherry tomatoes, halved

  • Fresh parsley, chopped

Instructions:

  1. Cook the Chicken Shawarma according to package instructions.

  2. Warm the flatbreads.

  3. Assemble wraps with chicken, cucumber, cherry tomatoes, and a drizzle of tzatziki sauce.

  4. Sprinkle with fresh parsley for extra flavor.

4. Trader Joe's Mango Chicken Sausage Stir-Fry

Ingredients:

  • 1 package of Trader Joe's Mango Chicken Sausage, sliced

  • 1 bag of Trader Joe's Frozen Stir-Fry Vegetables

  • 2 tablespoons of soy sauce

  • 1 tablespoon of honey

  • 1 tablespoon of vegetable oil

  • Cooked rice or noodles

Instructions:

  1. Heat vegetable oil in a pan or wok.

  2. Stir-fry the Mango Chicken Sausage until browned.

  3. Add the frozen vegetables and stir-fry until heated through.

  4. In a small bowl, whisk together soy sauce and honey.

  5. Pour the sauce over the stir-fry and toss to combine.

  6. Serve over cooked rice or noodles.

5. Trader Joe's BBQ Pulled Pork Tacos

Ingredients:

  • Trader Joe's BBQ Pulled Pork

  • Trader Joe's Corn & Wheat Tortillas (or preferred taco shell)

  • Trader Joe's Organic Slaw Mix

  • Trader Joe's Corn Salsa (or your fave salsa)

  • Trader Joe's Sour Cream

Instructions:

  1. Heat the BBQ Pulled Pork.

  2. Warm the tortillas.

  3. Mix the slaw with corn salsa.

  4. Assemble tacos with pulled pork, slaw mixture, and a dollop of sour cream.
